Eat on the local schedule
In Spain lunch is at two and dinner at nine. In Italy the kitchen closes between services. In much of Asia the best food is at breakfast and late evening. Eating at your home country's times puts you in restaurants that exist for visitors.
Two streets from the square
Distance from the main square correlates almost perfectly with price and quality in the opposite directions. Two minutes of walking is generally worth thirty per cent off and a noticeably better plate.
Read the room, not the reviews
A short handwritten menu, a room with local voices in it, and a lunchtime crowd of people who work nearby are more reliable indicators than any rating. A menu translated into six languages with photographs is a different kind of business.
Book one, improvise the rest
One reserved dinner per city, chosen properly and booked in advance, is worth the effort. The other nights are better left to what you find on the walk home, which is where most of the good stories come from.
